Orange ~ Garlic Poultry Marinade

I’m always trying different flavor combinations for marinating chicken breasts when smoking them. I’ve used orange juice on pork and beef, and decided to see how it would be on chicken.

I kept it nice and simple by using just a few ingredients. The Soy sauce adds some saltiness to it, and the garlic adds, well, garlic flavor, which is my favorite!

This turned out way better than I hoped. I believe I found my new #1 favorite chicken marinade for smoked chicken breasts.

Orange ~ Garlic Poultry Marinade

Ingredients

  • 2 cups frozen concentrate orange juice (no water added)
  • 1/2 cup Soy Sauce
  • 1 Tablespoon garlic powder

Preparation

  1. Rinse and remove the skin and excess fat from the chicken breasts. Put them into a plastic bag and set aside.
  2. Mix the marinade ingredients together. (Remember, do not add water to the orange juice!). Pour the marinade over the chicken breasts inside the plastic bag, remove the excess air and seal tight. Place in a bowl in case of leakage, and refrigerate for 8 hours or over night.

Smoked Sweet Marinated Salmon

I decided to try a new marinade for salmon on the smoker. I usually use my wife’s favorite marinade; Maple & Spice Salmon Marinade, but decided to change the flavors to a bit more on the Asian side, but still sweet.

I was amazed at how well the salmon soaked up the marinade. After 8 hours in the refrigerator, there was very little left to pour off.

Try this out and see what you think. I believe you’re gonna love it!

Smoked Sweet Marinated Salmon

Ingredients

  • 2 lb. salmon fillet
  • Marinade
  • 1/2 cup Red Wine Vinegar
  • 1/4 cup Honey
  • 1 Tablespoon Soy Sauce
  • 1 teaspoon Chinese Five Spice
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon

Preparation

    Marinade
  1. Mix all the marinade ingredients together. Microwave on high for 20 seconds. This is long enough to warm the honey, and also help dissolve the ground spices, but not heat it up too much to unsafely add to the fish.
  2. Remove the skin from the salmon and put them into a plastic bag. Pour the marinade into the bag with the salmon, seal it up and place the bag inside of a plastic container in case of leakage. Marinade for no more than 8 hours, or overnight.
  3. Smoking the Salmon
  4. Prepare your smoker and get it stabilized at about 250° F. I used peach wood for this cook.
  5. Once stabilized, pour off and discard the the excess marinade and place the salmon on aluminum foil in the smoker.
  6. Smoke for about 40 to 45 minutes. No need to flip the salmon. The salmon should be at an internal temperature of about 135° to 140° F to be fully cooked.

This marinade creates such a delicious flavor in salmon. I am sure it would produce awesome results in other fish also, but I’ve only used it on salmon so far. It really is an incredible flavor!

Give this one a try and see if you don’t love it and want to use it again and again!

Oriental Orange Spiced Salmon Marinade

Ingredients

  • 1 (12 oz.) can frozen orange juice concentrate (thawed)
  • 1/4 cup Soy Sauce
  • 1 teaspoon Chinese Five Spice

Preparation

  1. In a microwave safe bowl, mix the marinade ingredients together. Microwave on high for 30 seconds to help dissolve the Chinese Five Spice.
  2. Cut the salmon fillet so each piece has a uniform thickness and place in the marinade. Marinate in the refrigerator for at least 8 hours. (Or overnight)

Broiled Orange Spiced Salmon

Something different! This gives me a chance to use some new spices, and a cooking technique we usually don’t use for fish.

I bought some Chinese Five Spice for a different recipe that I still haven’t gotten to, so I decided to try it out on this salmon fillet. Okay, actually, my wife reminded me we bought it and haven’t used it yet! We also decided to broil the fish for a change of pace.

Broiled Orange Spiced Salmon

Cooking Notes:

1) Thinner fillets may completely cook during the broiling process.

2) The burning is mostly due to the marinade.

3) Do not overcook. The fish is done when the translucent look disappears and the meat starts to flake.

Ingredients

  • 1 lb. fillet salmon
  • Marinade
  • 1 (12 oz.) can frozen orange juice concentrate (thawed)
  • 1/4 cup Soy Sauce
  • 1 teaspoon Chinese Five Spice

Preparation

  1. In a microwave safe bowl, mix the marinade ingredients together. Microwave on high for 30 seconds to help dissolve the Chinese Five Spice.
  2. Cut the salmon fillet so each piece has a uniform thickness and place in the marinade. Marinate in the refrigerator for at least 8 hours. (Or overnight)
  3. Place salmon fillets, (skin side down) on broiling pan and broil until fish is slightly charred and crisped on the top surface. (This is mostly the marinade burning). This should take 3 to 4 minutes.
  4. Turn oven to 350°F, move rack to center of oven and continue baking until cooked through. Cooking time will vary depending on the thickness of the fillets. (For a thick fillet, approximately 10 minutes)
  5. Remove the skin and serve.
