Peanut Butter Cookie Bars

One of my favorite snacks my wife makes. This is probably one of my top five favorites. Loaded with chocolate chips and peanut butter.

I love how soft they always turn out. Be careful though, they can be very addictive.

Peanut Butter Cookie Bars

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup creamy peanut butter
  • 1/2 cup sugar
  • 3/4 cup brown sugar, tightly packed
  • 1 egg
  • 1 teaspoon vanilla
  • 1-1/2 cup flour
  • 1/2 teaspoon baking soda
  • 1 cup peanut butter chips
  • 1/2 cup milk chocolate chips
  • 1/2 cup semi sweet chocolate chips

Preparation

  1. Preheat oven to 350 degrees.
  2. Cream together butter and peanut butter. Add white and brown sugar, eggs, and vanilla. Mix in flour and baking soda. Add chocolate and peanut butter chips.
  3. Spread into an ungreased 13"x9" pan and bake for 18 to 22 minutes.

Chewy Chocolate Pan Cookies

Chewy Chocolate Pan Cookies-postChewy and chocolaty, yum!

These look like brownies, but are actually cookies. Pan cookies are much easier and quicker to make, because you don’t have to deal with the individual cookies. Just mix it up, put it in the pan, place it in the oven, then take it out of the oven and cut it up!

Not only easy, but mighty tasty too! This recipe was taken from Hersheys.com.

Chewy Chocolate Pan Cookies

Ingredients

  • 1 1/4 cups butter or margarine, softened
  • 2 cups sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 cups flour
  • 3/4 cup cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 2/3 cups (10 oz. package) peanut butter chips

Preparation

  1. Heat oven to 350° F. Grease 15-1/2 x 10-1/2 x 1 inch jelly roll pan.
  2. Beat butter and sugar in large bowl until light and fluffy. Add eggs and vanilla; beat well. Stir together flour, cocoa, baking soda, and salt; gradually blend into butter mixture. Stir in peanut butter chips. (Batter will be stiff) Spread batter in prepared pan.
  3. Bake 20 minutes or until set. Cool completely in pan on wire rack; cut into bars.
  4. Makes about 4 dozen bars.
