Oatmeal Chocolate Butterscotch Cookies-postI just love oatmeal cookies, don’t you? And then with the chocolate and butterscotch chips added in, well… it’s just that much better!

This is a recipe my wife found on the back of the Hershey’s butterscotch chips bag. And as always, she made it just that much better with her modifications. She’s just got a knack for recipes and how to put things together. So, you’ll definitely want to give this a try!

Oatmeal Chocolate Butterscotch Cookies


  • 3/4 cup butter or margarine, softened
  • 3/4 cup sugar
  • 3/4 cup packed light brown sugar
  • 2 eggs
  • 2 teaspoons almond extract
  • 1 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3 cups quick cooking or regular oats
  • 1 cup chocolate chips
  • 1 cup butterscotch chips


  1. Preheat oven to 375° F.
  2. Beat butter, sugar, and brown sugar in a large bowl until well blended. Add eggs and almond extract; beat well. Combine flour, baking soda, and baking powder, gradually add to butter mixture; beating until well blended. Stir in chips, mix well.
  3. Drop by heaping teaspoons onto ungreased cookie sheet. Bake 8 to 10 minutes or until golden brown. Cool slightly; remove from cookie sheet to wire rack. Cool completely.
  4. Makes about 4 dozen cookies.
