Ants on a Log ~ Chicken Burger-postYou’re not going to believe this recipe! You’re especially not going to believe how delicious it tastes until you actually try it. Trust me, you’ll want to make extra burgers, because you’re going to want seconds!

If you know what “Ants on a Log” are, then you’ll know that this burger has peanut butter, raisins and celery in it.  Yep, that’s what I said….peanut butter! Man is this a great flavor in a burger! I was a bit skeptical when my wife created this recipe, even though I am a huge peanut butter lover. After these burgers came off the grill and into a bun, I was doing plenty of ooohing and aaaaahing!

You can grill them like I did, or you can cook them in a skillet, as long as you’re trying them!

Ants on a Log ~ Chicken Burger

Ingredients

  • 1 lb. ground chicken breast
  • 1/3 cup diced celery
  • 1/4 cup chopped raisins
  • 1/4 cup creamy peanut butter
  • 1 cup crushed club crackers (we used Townhouse)

Preparation

  1. Mix celery, raisins, and peanut butter together. Add to the chicken breast. Form into a ball with a large spoon and flatten into patty in the club crackers. I didn’t make large burgers and was able to make 6 patties.
  2. I recommend cooking these in a skillet over low heat, or on a cool grill. I cooked them on the grill of course, but be careful, they cook fast!

There’s just something about asiago cheese that’s so good and full of flavor! And then when you throw bacon into the mix…. well, what more can I say?

Try this recipe out. It just may end up being the best ground chicken burger you ever ate!

Grilled Bacon & Cheese Stuffing Coated Chicken Burger

Ingredients

  • 1 lb. ground chicken breast
  • 2 cups sage and onion stuffing (crushed)
  • 4 slices cooked and crumbled bacon
  • 1/2 cup asiago parmesan cheese

Preparation

  1. Mix the bacon, cheese, and ground chicken breast together.
  2. Shape into 5 to 6 patties and coat the patties in the 2 cups crushed sage and onion stuffing, (my personal favorite is Brownberry).
  3. Get the grill going and establish a low to medium heat. Put the patties on the grill. These should only take about 4 or 5 minutes per side.

The combinations are endless for what you can add to a ground chicken burger to kick up the flavors. The last time I mixed cranberries into a burger, “Grilled Cranberry Walnut Turkey Burger“, I liked it so much, I had to do it again, but with a new twist of course.

I also put in plenty of asiago cheese. Asiago is without a doubt my favorite cheese. It has such a nice sharp and distinct flavor.

Grilled Cranberry Pistachio Chicken Burger

Ingredients

  • 1 lb. ground chicken
  • 1 cup shredded asiago cheese
  • 1/2 cup chopped pistachio nuts
  • 1/2 cup dried cranberries
  • salt to taste

Preparation

  1. In a bowl, mix together the chicken, cheese, pistachio nuts and cranberries. Form into 4 large patties, or 6 small patties.
  2. Get the grill going and establish a low to medium heat. Put the patties on the grill and salt to your liking. These should only take about 4 or 5 minutes per side.

Garlic Parmesan Chicken Burgers

Here’s a nice simple recipe that makes up an awesome little chicken burger. It takes little time to prepare, and no time at all to grill. The cheese is built right into the burger.

And even better, it’s a very healthy meal. Good tasting, and good for you!

Garlic Parmesan Chicken Burgers

Ingredients

1 1/4 lbs. ground chicken
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
2 Tablespoons lemon juice
Salt and pepper to taste
Nonstick cooking spray

Preparation

First, lets get the burgers mixed up and made into patties. In a bowl, mix together the ground chicken, Parmesan cheese, garlic powder and lemon juice. Once it’s thoroughly combined, form this into 4 patties. Of course you can make 3 if you prefer them nice and fat!

Now lets get that grill going. A nice medium hot grill will do for these. They cook very fast, so you don’t want the outside to cook faster than the inside. There’s very little fat in the ground chicken, so they can dry out on you if you cook them for too long. You’ll probably want to leave a cooler area on the grill to move them from direct heat if you end up with too hot of a fire.

Before you put the burgers on that hot grill, lightly spray both sides of the burgers with a cooking spray. You can read more on this technique in my grill tip article “Spray the Food, Not the Grill“.

Once they’re done, take them off and create a burger to your liking with your favorite condiments and the kind of bun of your choice. Personally, I like to put these on a nice onion roll. Very tasty! You can also lightly butter the buns and toast them on the grill just before taking the burgers off. Even more tasty!
