Strawberry Pie

Strawberry PieMy wife and I were at a neighborhood party a couple weeks ago and this pie was brought by one of the party guests. I thought it was so awesome, my wife, (always thinking), got the recipe and made for me a couple weeks later for my birthday.

Mmmmm mmmm! I just had to pass this recipe along to my readers.

Strawberry Pie

Ingredients

  • 1 quart fresh strawberries
  • 1 cup white sugar
  • 3 Tablespoons cornstarch
  • 3/4 cup water
  • pastry shell

Preparation

  1. Slice and arrange half of the strawberries in baked pastry shell.
  2. Mash remaining berries and combine with sugar in a medium saucepan.
  3. Place saucepan over medium heat and bring to a boil. Stirring frequently.
  4. In a small bowl, whisk together cornstarch and water. Gradually stir cornstarch mixture into boiling strawberry mixture.
  5. Reduce heat and simmer until thickened. (About 10 minutes).
  6. Stirring constantly, pour mixture over berries in pastry shell.
  7. Chill for several hours before serving.

Oatmeal & Strawberries

This is my all time favorite way to eat oatmeal. I typically make a nice hearty breakfast on Sunday mornings. It’s either eggs with chorizo, or maybe eggs with smoked ham, or I make up some hot cereal like oatmeal or grits!

I have to put fruit in my oatmeal though. It makes it so much better. Last time I got my hands on some dried figs and used the figs with my oatmeal. But my favorite fruit in oatmeal is without a doubt strawberries. That is when I can get good fresh strawberries here in Wisconsin during the winter months.

So here you go. It just doesn’t get much simpler than this.

Oatmeal & Strawberries

Ingredients

  • 4-5 medium fresh strawberries
  • Old Fashioned Oats (Not the instant kind)

Preparation

  1. Going by the directions on the back of the Oatmeal container, put the water into your sauce pan for a single serving. Before you start boiling the water, cut the tops off the strawberries, then cut them in half. Place them into the bowl you'll be using for the oatmeal.
  2. Now start your water boiling, and follow the directions on the container for the rest.
  3. I add a little sugar, but of course, that's optional.
