I love salmon croquettes just like they are, but with the added lemon juice and mustard, Mmmm mmmmmmmmm! You can definitely taste the mustard, but it wasn’t overpowering at all. Just right, I’d say!
So give these a try, even if you don’t want to smoke them, try it out in the frying pan!
Smoked Lemon Mustard Salmon Croquettes
1 – 14.75 oz. can red salmon (drained)
½ cup crushed soda crackers
1 tablespoon lemon juice
1 teaspoon yellow mustard
1) Mix all the ingredients together and form into 4 patties.
2) Get the smoker going, and get it settled in at around 230 degrees F. I used plum wood for this, but you can use whatever wood you prefer. I would suggest though that you stay with a milder wood so you don’t overpower it with a smoke flavor. Subtle is good!
3) Once the smoker is good to go, put the patties on the grate and let them smoke for 50 to 60 minutes, depending on how well cooked you like them. No need to flip them, but you can flip them once if you like.
