I got such an interesting response from my Smoked Nacho Cheese Dorito Meatloaf, that I decided to try something else that would be different. Also note that all the ingredients that can be reduced in fat have been used.
As always, I got some expert help from my wife. Her years of experience in the kitchen always helps me to pick the perfect complimentary spices and in the proper proportions. I’m always learning, and some day I’ll know a lot of what my wife already knows!
So, if you like the southwestern flavorings, you should like this. I’ve added black beans and corn to a meatloaf. Of course, after making this, I did a search on Google for black beans and corn in a meatloaf, and there were already plenty out there. But that’s okay, mine is better!
It’s actually a complete meal in one. I’m also baking this one in the oven, rather than cooking it on the smoker. But you can certainly cook yours in the smoker for that added smoke flavor. Just take a look at the smoker details of the Dorito meatloaf at the link above.
Salsa Ole Meatloaf
Ingredients
1 1.2 lbs. lean ground beef
1/2 cup salsa or picante sauce (I used Pace Picante)
3/4 cup frozen corn
3/4 cup black beans (drained)
1 egg (lightly beaten)
1 1/4 teaspoons ground cumin
3/4 cup shredded cheese (I used reduced fat 4 cheese Mexican)
Preparation
1) In a bowl, mix all of the ingredients together thoroughly.
2) Put it into a baking pan, and form it into a loaf.
3) Bake at 325 degrees F for 1 1/2 hours.













I looooveee meatloaf but haven’t had it in forever. The addition of salsa and black beans sounds so good, I can’t wait to try this recipe out.
