This beef roast turned out so tasty, and it’s such a simple marinade. We used a boneless Black Angus beef eye round roast with this marinade.
You can slice it and serve it as an entree, or slice it and make sandwiches out of it. Either way, it’s so nice and tender from the vinegar and olive oil, it will melt in your mouth!
Marinated Beef Eye Round Roast
- Boneless Beef eye round roast (2 1/2 lbs.)
- 1 Tablespoon beef bouillon
- 2/3 cup vinegar
- 1/4 cup olive oil
- Mix the marinade ingredients together and pour over the roast in a plastic ziploc bag, or a sealable container. Marinate in the refrigerator for 12 hours.
- Bake in the oven at 350° F. for 1 1/2 hours. It should be perfectly done. Still nice and pink in the center!
