Jack & Salmon on the Grill

As always, first things first. Fix yourself a Jack and Coke to enjoy while you’re grilling out. Now, while you’re at it, pour some of that Jack over the salmon. Just kidding, wait until you get to the directions for the Jack.

This recipe is going to knock your socks off! No, not because of the Jack, because the sweet flavor of the sugar, honey and other ingredients mixed with the natural flavor of the salmon puts this over the top!

So then, let’s get started.

Jack & Salmon on the Grill

Ingredients

  • 2 salmon fillets (approximately 4 lbs.)
  • 1/2 cup Jack Daniels whiskey (yes, you cans substitute for other brands)
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1/2 tsp. ground ginger
  • Salt & pepper to taste
  • Aluminum foil

Preparation

Get the grill started. You’re going to want a medium hot fire going for this.

In a small saucepan, combine the Jack Daniels, brown sugar, soy sauce, honey and ginger. Bring this to a boil, then lower the heat to medium, continually stirring the mixture until the liquid is thickened and caramelized. Remove this from the heat.

Salt and pepper the salmon fillets. Now create a foil platter for your salmon to grill on by folding all 4 edges of the foil so that it creates a 1/2″ lip around the platter. Lightly spray the foil with a cooking oil, then place the fillets skin side down on the foil.

Brush the Jack sauce on the fillets. Cook for about 7 minutes, then flip the salmon fillets. Now for the tricky part. Hopefully you’re not on your second Jack and Coke for this one! Once the fillets are flipped, with a spatula, remove the skin from the salmon and discard. This is also an opportunity to scrape off that gray matter that seems to be left behind on the skin side.

Now that you have the skin side cleaned, brush this side with the Jack sauce and continue to brush the fillets with the Jack sauce about every few minutes until fillets are cooked thoroughly. It should take about 15 minutes or until the salmon has a light pink color in the middle and starts to flake.

Serves about 5 hungry (and / or drunk) friends and family!
