Here’s another one of Grandma’s cookie recipes my wife has slightly modified. As you can see in the ingredients list, instead of the 2 cups of raisins, she’s changed it to 1 cup raisins and 1 cup chocolate chips. And she usually replaces the shortening with butter.
These are mighty tasty cookies!
Ingredients
- 3/4 C. shortening (I like to use 3/4 C. softened butter)
- 1 C. brown sugar
- 1/2 C. sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 C. flour
- 1 t. salt
- 1/2 t. baking soda
- 1.2 t. baking powder
- 3 C. quick cooking oatmeal
- 2 C. raisins (I use 1 C. raisins and 1 C. chocolate chips)
Preparation
- Preheat oven to 350° F.
- Cream shortening with the brown and white sugar together. Add eggs and vanilla. Mix in flour, salt, baking soda, and baking powder. Add in oatmeal 1 cup at a time and then add the raisins.
- Bake 10 to 12 minutes or until golden brown.
