Filled Stuffing Muffin Cups

Since there was only the two of us eating a Thanksgiving dinner this year, my wife decided to try out an idea she had to make muffin cups out of stuffing, and then filling them with a spiced hamburger mixture.

And what a great idea that turned out to be. I only wish she had made more! They were so incredibly delicious. I would suggest you don’t wait until next year to try these out.

Filled Stuffing Muffin Cups

Preparation Time: 30 minutes

Cook Time: 30 minutes

Servings: 12

Ingredients

    Muffins
  • 6 cups stuffing mix (your preference)
  • 1 egg
  • 1 1/4 cup water
  • Filling
  • 1/2 lb. lean hamburger
  • green onion (chopped)
  • celery (chopped)
  • 1 clove garlic (minced)
  • salt & pepper to taste

Preparation

  1. Mix the stuffing ingredients and allow time for the stuffing to absorb the liquid.
  2. Grease the muffin pan and fill half way with stuffing. Then press the center of the stuffing down in each cup to form a cup for filling.
  3. Mix the filling ingredients together and fill each stuffing cup to the top. Bake at 350° F. for 25 to 30 minutes until browned and slightly crisped.
