I have been thinking about this a lot lately, because I hear comments from time to time like, “those don’t go together’, or “that’s not the way it’s usually done”. I say experimentation is where new ideas and techniques come from. Remember, there was a day in history where no one ever dreamed of combining peanut butter and chocolate.

So with that said, I try all sorts of different things. Some really don’t work at all, so they go back into the shop for a little tweaking. Some eventually just get scrapped, but rarely.

I’m working on some different dry rubs right now that have some very unusual flavors in them. After I’ve experimented, tweaked, re-tweaked and taste tested over and over, you’ll get all the details on them. At that point, I’ll know without a doubt, that most of you will be very pleased. Hell, who knows, maybe some will even be amazed! Okay okay, I can dream can’t I?

I am also working on some different combinations for marinades and injection flavors. I go to the grocery store to pick up apple juice for a marinade, because that’s what everyone else is using, but next to it I see peach nectar. So I think, hmmm, that could be good, so I buy it and try it!

With my wife’s increasing interest and participation in the recipe creations, it’s getting even better. She has some ideas we haven’t tried yet, but they sure sound awesome to me! Some are definitely very unique and unusual.

So, next time you see something on my website and say to yourself, “that won’t work”, go ahead, be brave and try something new. What’s the worst that could happen? Your dog could end up getting an expensive meal that night. But then, if your dog won’t eat it either, please don’t tell me about it, I’m very sensitive!
