Alright, you can stop giggling anytime now! That’s not the kind of nuts I’m talking about.
You can take any kind of nuts that you can buy raw and smoke them. But on this recipe, we’re going for sugared smoked pecans. So here we go!
Smoked & Sugared Pecans
Ingredients
2 Tablespoons melted butter
1 1/2 Tablespoons brown sugar
1 teaspoon ground cinnamon
2 cups pecan halves (raw)
You’re going to need an aluminum screen, or something similar to put the pecans on. You can get these very cheap in the BBQ section at any of your local (Wal-Mart, Home Depot, etc). I’ve included a picture here so you can see what I use.
Preparation
Fire up the smoker, and get it stabilized at 250 degrees. I would recommend Apple or Hickory for this, but you’re certainly welcome to experiment. Any light fruit wood would work well also. I’m using Apple this time.
Put the pecan halves into a mixing bowl, then pour the melted butter onto the pecan halves. Mix this thoroughly.
In a separate bowl, mix the sugar and cinnamon together. Pour the cinnamon and sugar mixture over the buttered pecan halves, and mix this thoroughly until evenly coated.
Now, take your aluminum screen and spray it with something like canola oil, or Pam will do also. Spread the pecans out on the screen so they are in a single layer as best as possible. Put this on the smoker grate. If you have multiple grates, use the top grate.
Smoke this at 250 degrees for 20 minutes. It doesn’t take long, you just want the pecans to crisp up a bit, and the sugar to caramelize on the pecans. Remove the aluminum screen from the smoker, and let the pecans cool for 15 to 20 minutes.
Note: Don’t let the heat get much above 250 degrees, otherwise the sugar will start burning.
Once they’ve sufficiently cooled, pour them into an airtight container for storage. That’s if you have any left after you, the family, and friends sample them!
