This is some very tasty bread. I love the cherry flavor, and the cherry icing my wife added to it puts it right over the top for flavor. My wife found the original “Coconut Banana Bread” recipe on the Chicago Metallic Bakeware website.
Try it out, I know you’re gonna love it!
Ingredients
- 2 eggs
- 1 cup sugar
- 1/2 cup butter (melted)
- 1 cup bananas (ripe)
- 1/2 teaspoon almond extract
- 1 1/2 cups flour
- 1/2 cup coconut
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup walnuts (chopped)
- 1/2 cup Maraschino cherries
- 1 1/2 cups powdered sugar
- 1 to 2 Tablespoons cherry juice (from Maraschino cherries)
Icing
Preparation
- Preheat oven to 350° F.
- Beat the eggs until they become light and frothy. Add the sugar and melted butter. Stir in mashed bananas and almond extract. Add in the remaining ingredients and mix together well.
- Pour the batter into a greased pan.
- Bake for 1 hour.
- Mix the powdered sugar together with the cherry juice until you have the desired consistency.
