Living in Texas most of my life, chorizo sausage in scrambled eggs is a pretty common dish. And I might add, one of my favorite regional Texas meals.
Unfortunately, I’m still on the hunt for really good, authentic chorizo up here in Wisconsin. But, I. Will. Find. It!
There are many ways to prepare this, and many different ingredients that can be used in chorizo and eggs. The next recipe I put out for this will have some different, but common Texas / southern ingredients, so be sure to check back, or just subscribe to my RSS feed.
Chorizo & Onions Scrambled Eggs
Note: I’m making this for myself only, and this ingredient list is designed for a 1 serving meal. So if you’re cooking for the family, increase the portion of chorizo in the same ratio as you increase the eggs.
Ingredients
3 large eggs
1/8 cup diced onions
1/2 link chorizo sausage
salt to taste
Preparation
1) In a bowl, break the 3 eggs and scramble. Now put in the diced onions and salt to taste and mix this together.
2) In a skillet, remove the chorizo sausage from the casing and fry on medium high. As the chorizo heats up, it will start to break down and the grease will start lightly covering the bottom of the skillet. I generally help break it up with my spatula.
3) Once the chorizo is fried up, (about 3 to 5 minutes), add the eggs and onions into the skillet and quickly mix together. Continue cooking until done.
Serves 1 hungry chorizo lover!
















Oh yes! This is definitely the way to kick up scrambled eggs. I adore chorizo sausage and we often pair it with eggs and wrap it in a flour tortilla. So good!

I normally add chorizo to omelette, but I’ve never tried it with scrabled eggs. Must make amends soon.
