This is a great way to use up left over baked potatoes. Not only that, but it’s a much healthier way to prepare fried potatoes. No deep fat frying, or frying in tons of butter and / or oil.
A little bit of spray cooking oil is all you need. And boy oh boy are these ever tasty! One of my favorite sides for dinner.
A Healthier Seasoned Fried Potatoes
- 4 medium sized potatoes
- chives (to taste)
- basil (to taste)
- oregano (to taste)
- Seasoned Salt (to taste)
- In a 350° F oven, bake the 4 potatoes until soft. About 1 1/2 hours. Remove from oven and let completely cool.
- Cut the potato into small pieces. Spray a frying pan with cooking spray and place the potatoes into the pan over medium heat.
- This recipe doesn't call for exact portions on the spices, so just sprinkle the potatoes to your liking with the chives, basil, oregano and seasoned salt.
- Cook over medium heat, turning frequently until the outside of the potatoes are crispy.
