A Healthier Seasoned Fried Potatoes-postThis is a great way to use up left over baked potatoes. Not only that, but it’s a much healthier way to prepare fried potatoes. No deep fat frying, or frying in tons of butter and / or oil.

A little bit of spray cooking oil is all you need. And boy oh boy are these ever tasty! One of my favorite sides for dinner.

A Healthier Seasoned Fried Potatoes

Ingredients

  • 4 medium sized potatoes
  • chives (to taste)
  • basil (to taste)
  • oregano (to taste)
  • Seasoned Salt (to taste)

Preparation

  1. In a 350° F oven, bake the 4 potatoes until soft. About 1 1/2 hours. Remove from oven and let completely cool.
  2. Cut the potato into small pieces. Spray a frying pan with cooking spray and place the potatoes into the pan over medium heat.
  3. This recipe doesn't call for exact portions on the spices, so just sprinkle the potatoes to your liking with the chives, basil, oregano and seasoned salt.
  4. Cook over medium heat, turning frequently until the outside of the potatoes are crispy.
